The Viability and Stability of Demand: The Future Outlook for the Organic Market in Denmark (CONCEPTS)

The key issue addressed in this project concerns the future outlook for the organic food market in Denmark, assessed on the basis of factors that tend to support or undermine its viability and stability.

The focus is upon the extent to which changes in purchasing patterns are related to: (a) particular ways of conceptualising and categorising organic products, producers and production methods, and the relationship between modes of categorisation and willingness to pay a premium price for organic products, (b) the effects of exposure to new information (positive or negative) regarding organic products, producers or production methods on product preferences, or (c) changes in the demographic or social situation of consumers/households (brought about by migration, divorce, unemployment, birth of children, etc.).
